Ingredients
- 1 onion
- 3 cloves garlic
- 1 small chili pepper or 1 tsp sambal oelek
- 300g spinach
- 2 tbsp olive oil
- 2 tbsp chopped mint
- 2 tbsp chopped cilantro
- 6 dl vegetable broth
- 2 tbsp lemon juice
- pepper, salt
Instructions
Peel and chop the onion and garlic. Finely chop the red chili pepper without seeds. Heat the olive oil in a soup pot and stir-fry the onion, garlic, chili and spinach. Add mint, cilantro, broth and lemon juice. Heat the soup and puree with an immersion blender. Add black pepper and salt to taste.
